I recently came across this picture of a Super Hornet carrying an external fuel tank that struck me as being different from the norm. To me it looks like it has an opening for some nature of camera or sensor, though, to my knowlegde, the SH does not carry such a pod. Any information would be great.

No it’s a window for the “Plane captain” When they go TDY they take a “Plane captain” with them in the pod. You can actually fit two people in them, but the extra space is usually filled with golf clubs and beer.

Raytheon is now delivering the SHAred Reconnaissance Pod (SHARP) for the F/A-18. SHARP features a medium-altitude electro-optic and infrared sensor with manual or automatic modes of operation, with a spiral insertion of high-altitude EO/IR performance planned.
