This was an issue brought up a few years ago on another site, so I went nuts taking pics at Miramar that year. The pictures are pretty accurate, but to many it stll looks white. However, in the last two pics, look at the difference between the AMRAAM radome and the HARM. The AMRAAM radome is white, and clearly lighter in color than the HARM. Best match is FS36495 Light Gray.
Well, you got it right...but backwards. It's not ustabewhite, it's gonnabewhite. I think people think it's white because the gray paint oxidizes into a whitish gray. You're quite right in that it gives it a dingy, pasty color, and when you paint it light gray, you've given it a sort of insta-weather. Mike says the color is in fact camouflage grey, and that it just lightens up and oxidizes. That's why I go with the 36495 when I paint mine. Ain't that right, Mike?
