I know the Lightning has the capability to carry a multitude of weapons, but what about sensors? Are all weapons sensors going to be installed in the aircraft, or are they interchangeable? i.e. dropping a GBU-12 for a CAS mission one day and an AGM-88 for a Wild Weasel mission the next?

One of the wonders of the F-35 is that its ECM/ESM suite makes each and everyone of them a Wild Weasel, while its optical targetting sensors makes each and every single one a CAS/Interdiction platform. There will be no "F-35CJ" or "F-35CG", that's for sure.

The short answer is yes. The F-35 will carry the APG-81 AESA radar, DAS, EOTS, EWS and CNI systems. It will be able to be a close air support aircraft, deep striker, wild weasel, air superiority fighter and recon bird on the same day. Or you can have a few F-35s fly an offensive fighter sweep to take out any enemy fighter opposition, a few carrying ADS missiles to kill SAM sites while others carry bombs to take out high value targets all in the same sortie with no difference between the hardware on the various aircrafts in the squadron.
