I would like to know a lot more about technology for jet fighters.
i.e. technical specs, weapon systems, aerodynamic shape, engine specs, etc. What are some of the best sources to find an enormous amount of information? Any books or dvds you recommend?

Modern Combat Aircraft Design by Klaus Huenecke is one that comes to mind. A great basic book geared specifically for Combat Aircraft.

Aircraft Design: A Conceptual Approach (Aiaa Education Series) by Daniel P. Raymer

Look for any of the AIAA series...

Engine specific data can be hard to come by; most of the "new" technologies are closely guarded "trade secrets", but general aircraft gas turbine knowledge is out there.

ASME Papers . . . to many to list

Gas Turbine Theory by Saravanamuttoo, Rogers, and Cohen - get the one with the units you usually think in, metric or imperial otherwise the math will make your head spin.

Theory & Design of Gas Turbines & Jet Engines by Vincent, mine is a first edition that is older than I am but full of usefull information on basic gas turbine theory and history.

Principles of Combustion by Kwan-Yun Kuo

Combustion by Glassman

Gas Turbine Engineering Handbook by Boyce

Elements of Gas Turbine Propulsion by Ohain and Mattingly

Gas Turbine Performance by Walsh & Fletcher

Gas Turbine Heat Transfer and Cooling by Je-Chin Han
