One suggestion nobody mentioned yet, is get degree/masters in aeronautical engineering, and become a civilian test pilot.
There is a few non-military entities that fly the F-16. Lockheed Martin, NASA, Calspan come to mind. Not all their pilots are military by background. A few more have Flight Test Engineers that fly in the back seat of a F-16 or other fighter aircraft.

You would still need a medical clearance, and a security clearance, but flying as a test pilot is one way around the age limit.
